I have been in the slaughtering industry for over fifty years and can say in all honesty that the Meat Hygiene Service and the Food Safety Agency are nothing more than a cosmetic scam who along with some professors and scientists are living off the back of the B S C crisis which itself is due to the incompetence of M.A.F.F now known as BEFFRA.
The only persons employed in this farce that are legitimate are licensed meat inspectors who in reality are the only authority needed in a slaughterhouse.
In the scam is the presence of a veterinary surgeon and so called technicians to monitor S.R.M material based on a theory that B.S.E in cattle could be linked to C.J.D in humans, there is no medical or scientific proof that this is possible.
In 1995 the Meat Hygiene Service took over meat inspection for all the UK and had authority to impose methods of dressing carcasses which are a disgrace to the meat industry an insult to the proffesional slaughterman and a danger to the public health.
At the end of the day a carcase is only as clean and hygienic as to the skill of the men that dress them

I heartily agree with your comment about a carcase only being as clean and hygienic as the skill of the men that dress them.
